Functional Characteristics of Mustard

Mustard serves a number of very functional roles as an ingredient in various products.

Emulsifier:
Mustard flour is used to aid emulsification in products such as mayonnaise and salad dressings.

Stabilizer:
The fine particles of mustard accumulate at the oil / water interface in mayonnaise - acting as a physical protection against emulsion breakdown. Deactivated mustard helps to maintain the volume of mayonnaise after sparging.

Depending on the application, the use of mustard will improve colour, flavour, stability of the emulsion and clean up the ingredient statement. It is a versatile and inexpensive ingredient that is 100% natural.
