Mix mustard with water at room temperature and allow 5 minutes for heat and flavour to develop. Bring to boil and continue for 10 minutes. Cool down, and add the remaining ingredients, homogenize or pass through a colloid mill. Allow to age for a day and adjust with dry mustard if too liquid or water and/or vinegar if too viscous.
*Cold processing requires 2-3 weeks of aging. |
