Roasted Lemon Shrimp with Mustard
- 1 lb shrimp, shell-on, trimmed, cleaned, and patted dry
- zest and juice of 1 lemon
- 3 tbsps olive oil
- 1 tsp dijon prepared mustard
- 1/2 tsp dried thyme
- 1/4 tsp fresh cracked black pepper
- 1/4 tsp red pepper flakes
- 1/8 tsp sea salt
- 2 green onions, chopped
Preheat oven to 400°F. In a medium mixing bowl, combine all ingredients (except for green onions). Toss well and spread on a baking sheet and bake for 5 minutes or until shrimp are pink and cooked through.
Serve on a bed of lettuce, wilted greens or quinoa.
Garnish with green onions.
