Mustard Soup

  • 1/2 onion, chopped
  • 1 garlic clove, chopped
  • 1 tsp oil
  • 4 cups vegetable stock
  • 4 tsps cream
  • 2 Tbsps Dijon Mustard
  • 2 Tbsps chives, chopped
  • 4-6 slices bacon or Pancetta, chopped and fried

Glaze onion and garlic in the oil until golden. Add stock and bring to boil. Add cream and mustard. Simmer and serve. Garnish with bacon + chives
