Honey Mustard Chicken Skewers

  • 1 lb. Boneless Chicken Breasts
  • 1/3 cup Dijon Mustard
  • 1/4 cup Honey
  • 2 Scallions, chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon dried Tarragon
  • 1 teaspoon minced Garlic
  • Ground Black Pepper to taste

Cut chicken into cubes. Marinate chicken in mustard, honey, oil, tarragon, cumin powder, garlic and pepper for at least 2 hours. Put marinated chicken pieces on skewers. Brush some oil on grill and barbecue until chicken is done. Garnish with scallions and serve with a green salad and couscous.
