Caramelized Watermelon Steaks

  • 1 watermelon
  • 2 Tbsp olive oil
  • sea salt and freshly ground pepper to taste
  • 1 Tbsp brown mustard
  • juice of 1 lemon
  • 1 Tbsp extra virgin olive oil
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped parsley

Preheat grill to medium-high heat. Slice the watermelon into 1″ rounds and brush with 2 Tbsp olive oil. Place watermelon slices directly on grill. Sprinkle with salt and pepper. Grill for 3-4 minutes per side. Whisk mustard, lemon juice, 1 Tbsp olive oil together until well incorporated and drizzle onto grilled steaks. Sprinkle with feta and parsley.
