- 1 pound carrots, peeled and grated
- 1 Tbsp shallots, finely chopped shallots
- 2 tsp Dijon mustard
- 3 Tbsp olive oil
- juice of one lemon
- 1-2 tsp honey, to taste
- sea salt & freshly ground black pepper, to taste
In a large bowl, combine grated carrots and shallots. In a small bowl, whisk dijon mustard, lemon juice, honey, olive oil, salt and pepper and add to salad. Cover and refrigerate until ready to serve.
