Apple and Pork Skewers

  • 1 pork tenderloin, cut into 1″ pieces
  • 1 apple, cut into 1″ pieces
  • 1 medium red onion, cut into 1″ pieces
  • ¼ cup balsamic vinegar
  • 2 Tbsp olive oil
  • Tbsp honey
  • 1 tsp dijon mustard
  • sea salt
  • fresh ground pepper

Heat grill to medium heat. In a small bowl, combine balsamic vinegar, olive oil, mustard and maple syrup and set a side. Skewer pork, apples and onion and sprinkle with salt and pepper. Place skewers onto grill and brush with marinade. Grill 5 minutes, turn and brush with more marinade. Grill for another 5 minutes until pork is fully cooked.

Note: if using wood skewers, soak them in water for 30 minutes in water before using.
