Holiday Turkey

  • 10-12 pound turkey
  • 2 Tbsp sea salt
  • 1/2 cup coarse-ground Dijon mustard
  • 3 cloves garlic, minced
  • 2 Tbsp fresh thyme, minced
  • 2 Tbsp fresh sage, minced
  • 2 tsp freshly ground black pepper
  • 3 Tbsp olive oil

Preheat oven to 350° F. Rinse turkey in cold water and pat dry. Sprinkle salt all over skin as well as into the cavity. Set turkey in a roasting pan and allow to warm up to room temperature. In a small bowl combine Dijon mustard, garlic, thyme, sage and black pepper. Evenly spread the mustard mixture over the turkey, then drizzle with olive oil. Tent a piece of foil over the turkey and place in oven. Bake 30 minutes, and then remove the foil. Continue baking for approx. 2-1/2 hours more, until turkey has reached an internal temperature of 170°F. Remove the turkey from the oven and tent with reserved foil. Let rest for 30 minutes before slicing.
