Lamb Burgers

  • 2 lbs ground lamb
  • 2 Tbsp Dijon mustard
  • 4 Tbsp Italian parsley, finely chopped
  • 1 clove garlic, minced
  • 2 scallions, finely chopped
  • Zest of 1 lemon
  • Sea Salt and freshly ground black pepper to taste
  • fresh mint leaves
  • greek yogurt
  • cucumber slices
  • pita or naan bread

Combine parsley, garlic, lemon zest in a small bowl. Add Dijon mustard and mix together with a fork. In a large bowl, combine ground lamb and parsley mixture. Form into 6-8 patties and season with sea salt and pepper on both sides. Cook the burgers for 3 to 4 minutes on both sides, or until desired doneness. Serve in pita pockets or naan bread and top with greek yogurt, cucumbers and fresh mint.
