Scrumptious Summer Salad

  • 5 cups baby arugula
  • 1 cup chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red seedless grapes
  • 1 avocado, sliced
  • 1/4 cup walnuts
  • pomegranate seeds (optional)

Dressing

  • 2 Tbsp greek yogurt
  • 1 Tbsp olive oil
  • 1 Tbsp freshly squeezed lemon juice
  • 2 tsp honey
  • 1 tsp whole grain mustard
  • 1 tsp fresh ginger root, peeled and finely grated
  • 1 clove garlic, minced
  • sea salt
  • fresh ground pepper

Combine dressing ingredients in a small bowl and mix until smooth, set aside. In a salad bowl, combine arugula, tomatoes, grapes, and chickpeas. Top with avocado slices and walnuts. Drizzle with dressing.

TIP—sprinkle with pomegranate seeds for an extra sweet pop of flavour!
