Lemon Mustard Vinaigrette

  • 1 small shallot, chopped
  • ¾ cup olive oil
  • ¼ cup fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp dried tarragon
  • Sea salt
  • Fresh ground black pepper

In a blender, purée all ingredients until smooth; season with salt and pepper.

This is a light, tangy dressing for salads and grilled vegetables.
