Simply Savory Mushrooms

The earthy flavour of the mushrooms is enhanced by garlic, shallots, lemon juice and mustard

  • 1 lb. crimini mushrooms
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 tsp lemon juice
  • 1/4 cup Italian parsley, chopped
  • 1 Tbsp Dijon mustard
  • Salt and pepper, to taste

Preheat the oven to 450° F. Wash, trim, and halve the mushrooms. Toss with garlic and shallots in oil and place in oven-proof dish. Top with butter and roast until the mushrooms are tender and browned (about 20 minutes). Stir in lemon juice, parsley, and Dijon. Taste and season with salt and pepper.
