Maple Mustard Potatoes

  • 2 lbs new potatoes, cut in half
  • 3 Tbsp olive oil
  • 1 Tbsp dijon mustard
  • 1 Tbsp whole grain mustard
  • 1 Tbsp maple syrup
  • 1 tsp dried rosemary
  • 1/2 tsp dried dill
  • 1 tsp sea salt
  • freshly ground pepper to taste
  • chopped fresh parsley, for garnish

Preheat oven to 425°F. Line a sheet pan with parchment paper. Rinse, scrub, and pat dry the potatoes. Cut the potatoes in half and set aside. In a mixing bowl combine olive oil, mustards, maple syrup, rosemary, and dill; mix together until completely incorporated. Add potatoes to mixing bowl and toss until coated. Spread potatoes in a single layer on a sheet pan. Season with sea salt and fresh ground pepper. Roast in the oven for 25-30 minutes, flipping half-way through cooking. Garnish with chopped fresh parsley and serve.
