BBQ Steelhead Trout

  • 6 Steelhead trout filet
  • 1/2 cup olive oil
  • 2 Tbsp fresh basil, chopped
  • 2 Tbsp garlic, minced
  • 2 Tbsp yellow onion, finely chopped
  • 2 Tbsp green onion, chopped
  • 2 Tbsp horseradish
  • 1 Tbsp grainy mustard
  • 1 Tbsp prepared yellow mustard
  • 1 Tbsp Dijon mustard
  • 1 tsp freshly ground pepper
  • 1/4 tsp cayenne
  • zest from 1 lemon

Combine all sauce ingredients together in a blender. Baste trout with sauce while barbecuing. Add a little more sauce just before serving.
