Sautéed Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 2 Tbsp vegetable oil
  • ½ tsp each salt and pepper
  • 1 Tbsp whole-grain mustard
  • 1½ tsp red wine vinegar
  • 2 shallots, minced
  • 1 small garlic clove, minced
  • ½ tsp dried thyme
  • 1 Tbsp honey
  • ¼ cup extra-virgin olive oil
  • 4 slices cooked bacon, crumbled
  • ¼ cup roasted red peppers, chopped

In a large skillet, sauté beans in vegetable oil over medium high heat. Season with salt and pepper. Cook until tender-crisp (5-7 mins.) and remove from heat. In a small bowl, whisk together mustard, vinegar, shallot, garlic, thyme and honey. Whisking constantly, drizzle in olive oil. Add vinaigrette to beans and toss to combine. Season with salt and pepper to taste. Return to heat, add bacon and peppers.
