Just Add Mustard
Mustard is one of the most versatile spices in the world. Aside from its distinctive flavour and nutritional values, it serves a number of very functional roles as an ingredient such as an emulsifier, an antioxidant, a stabilizer, a preservative, and a binder.
As mustard contains almost 30% protein, it also serves well as a protein source. It is an essential ingredient that adds flavour and texture to much of what we consume – salad dressings, mayonnaise, tomato sauces, processed meats, seasoning blends, and of course, prepared mustards.
