The characteristic flavour of mustard is an essential component to many products. It can be used to add heat but it can also be used as a flavour enhancer because the flavour profile of mustard does not linger.
Mustard seeds are used to add texture and visual appeal and on a purely functional level, deactivated mustard can be used to replace more expensive solids and reduce costs.
