Tomato Based Products

In many countries, mustard is used as a natural binder, replacing starches and gums in tomato based products. It is also used as a natural replacement for tomato solids.

By using a blend of deactivated mustard and water, it is possible to match the viscosity and thixotropic properties of tomato paste. The mixture can then replace up to 10% of the total tomato paste in the formula. Due to its high liquid absorption capacity, mustard is used to increase smoothness and texture.

Deactivated mustard reduces the overall cost by thickening, enhancing flavour, preventing separation and replacing tomato solids. Deactivated mustard is also commonly used in all-natural tomato based pasta sauces where the antioxidant properties are an added benefit.
