Deactivated Yellow Mustard

This is a finely ground yellow mustard which has had the enzyme myrosinase deactivated by subjection to controlled heat and moisture conditions. It is used as a bland tasting functional ingredient with user friendly label declaration - in most countries it can be declared as "spice".

Deactivated yellow mustard is a high protein source, a water binder, antioxidant and stabilizer. (Read more about those properties here.) Applications include meat products, sauces, mayonnaise. Product codes begin with "6".
