Lamb Chops with Mint Sauce
- 2/3 cup extra-virgin olive oil
- 2 cloves garlic, minced
- 8 lamb chops, 1″ thick
- fresh ground black pepper, to taste
- sea salt, to taste
Sauce:
- 3 Tbsps whole grain mustard
- 2 Tbsps white balsamic vinegar
- 1 Tbsp honey
- 1/3 cup fresh mint leaves
Remove lamb chops from fridge 30 minutes before cooking. Preheat broiler to high. Combine minced garlic and olive oil in a small saucepan over medium-low heat. Heat for 5 minutes, until oil is fragrant. Brush chops on both sides with garlic oil and season with sea salt and pepper. Place on broiler pan and broil for approximately 4-6 minutes per side. Remove from oven and let rest for up to 10 minutes, tented with foil.
Sauce — combine mustard, vinegar and honey in a blender. Blend on medium speed while drizzling the remaining garlic oil. Add fresh mint leaves and process until finely chopped. Drizzle over chops or serve on the side.
